Atkins Diet Recipes: Low carb Cauliflower Bisque

Low Carb Cauliflower Bisque:
1 small onion, diced
2 stalks celery, finely sliced
1 TBS butter
1 Medium cauliflower, chopped
3 cups chicken broth
1/2 cup cream
Salt and pepper

In a large frying pan, saute the onion and celery until translucent and tender. Salt and pepper to taste. Add cauliflower and the broth; bring to boil. Change heat to medium-low for 20-25 minutes. Add Cream. Use a stick blender or blender to liquify the soup until completely smooth and thick. Add salt and pepper, if needed. Optional toppings: Cheddar cheese or real bacon bits.
Makes about 8 servings.

I haven’t tried freezing it yet as it usually departs the house too quickly, but having some ready made in the freezer is a good idea. Thanks for the advice.
As for the myth, I directly attribute it to two things — people who didn’t read the book and did Atkins how they thought it was done, and media people who also didn’t read the book.

When did the myth that Atkins is only bacon and pork rinds. I eat more fresh veggies and whole fresh foods on low carb (atkins) than ever before. Great recipe Kent. I love the fact it freezes well too.

Certainly, my parents and grandparents while excellent cooks and pastry chefs taught nothing on low carb cooking nor did my wife low fat conscious parents. I am just fortunate that others have blazed the trail before me and posted great recipes like this on the web.
