Atkins Diet Recipes: Low Carb Chewy Candy Bar

Another great low carb comfort food recipe from Linda’s Low Carb (http://www.genaw.com/lowcarb/chewy_pean utbutter_candy.html):
2 TBS butter
1/4 cup natural chunky peanut butter
1/4 cup Splenda
1 cup chocolate whey protein powder
1/4 cup Da Vinci SF Vanilla syrup
1/4 cup Salted nuts (optional)
* Melt the Butter, and mix with Splenda.
* Add the Peanut Butter to the mix until smooth.
* Mix protein powder until crumbly
* Add SF syrup, and the mix should turn glossy and much easier to form into 2 mini loaf pans
* Freeze mixture for 1 hour, and it should be able to be eaten.

I am fortunate it hasn’t bothered me, so I guess I am fortunate. Stevia the original stuff I just couldn’t take it. It was too herby and not “right.” Truvia on the other hand is good, but they bulk it with erythtol. The packets are HUGE! I had to split them in thirds or halves in order to get the right sweetness.

I am sensitive to splenda/sucralose, it gives me a headache. (I can’t eat aspartame either, go figure) But I have been safely using Stevia for years, it’s a natural plant extract (from South America) It’s available at health food stores in the U.S., and Coca-cola and Cargill are (finally) developing at sweetener using stevia. It’s GREAT in smoothies and drinks, a little trickier to use in solids, but it is natural. In Japan it’s sold IN foods, in America the FDA has slowed its use (politics)!

Sorry, I just have bought into the Splenda being bad argument. Some of the wisest diet doctors like Dr. Eades (Protein Power) and Dr. A both advocated sucralose while not being owners of Splenda stock or compensated. After 20 years of studies, it was approved. But as with any artificial sweetener, it should be limited to 3 servings per day.

I bought my Chocolate Whey powder about 9 months ago at Wal-mart. That would translate to a bit over 1g for the whey protein in the final product (1/8th recipe). It should be fine.

Can you use unsalted butter? Have you tried it?
Did you buy the whey protein powder recently at Walmart? The only kind I could find there has 3g per scoop. It takes a little over 3 scoops for a cup. Would this still be low carb enough to make a difference?

I tried this recipe the 1st time with Splenda and found it too sweet… the 2nd time without, much better! I also found that a small amount of salt once it’s smooshed into a flat shape at the end helps. I also have began scoring it slightly before it goes into the freezer. Much more easy to dole out afterwards. Thanks for the great recipe!

Yes, you still lose weight, but potentially if you might not be eating enough of the right foods. You may have other problems especially if not taking a multi-. I did nearly 1 year of Induction, so 3 weeks should not be a problem.
